Eponine's Dream is an organic bittersweet cocoa, and is our first experiment with making cocoa.
It took us some time to realize that the lessons we had learned from tea made branching out into cocoas a natural progression.
However, we have learned that organic is an important choice, and that we enjoy knowing exactly what is in the things we are drinking.
'Grampa's Stash' is probably the most unusual of the cocoas we have made so far.
We had known for quite some time that we wanted to create a butterscotch cocoa, because it just seemed like an amazing idea. However, it took us quite some time to find the right way to add the taste of butterscotch.
In the end, the solution turned out to be a bit labor intensive, but the result is well worth it.

'Javert's Choice' is our dark chocolate blueberry cocoa.
The taste was inspired by chocolate covered blueberries. (There is a particular memory of them for me that is a happy one.)
In order to get the blend of the cocoa right, both for dissolving into the milk properly, and for the taste, we use an organic raw blueberry powder.
